Western Residence Dining chef Andrew DuHasky worked up something special south of the border last month at the Produce Marketing Associations’ Foodservice Conference in Monterey, Calif.
DuHasky, along with teammates from the Ontario Greenhouse Vegetable Growers (OGVG), took home second place, best of show, for their innovative product and showmanship at the conference. The Ontario Hall chef developed a recipe utilizing locally grown produce and served this feature item to attendees at the OGVG booth, at the conference.
It was a record-breaking year at the 33rd annual foodservice conference, themed Innovate the Plate, with 1,821 attendees from North and South America, 203 operators, 466 distributors and 164 exhibit booths.
“It was great to see so many food service and produce professionals here rallying behind the common goal of putting more fresh, delicious, healthy fruits and vegetables on food service plates,” says Jill Overdorf, PMA Foodservice Conference Committee co-chair.
